El pecán (Carya illinoinensis) pertenece a la familia de las Juglandáceas, al género Carya y a la especie illinoinensis. El nombre común es nuez pecán o pecán. El árbol de nuez pecán comienza a producir en pequeña cantidad a los 5 años y a partir de los 7 u 8 se estima que producen entre 8 y 10 kilos cada uno, aumentando la cantidad según pasan los años.
Las nueces de cultivares comerciales de pecán presentan una relación en peso entre la parte comestible y la cáscara más favorable que la nuez común:
o Nuez pecán: 48-55% de peso parte comestible
o Nuez europea: 40-48% de peso parte comestible.
